Fast microwave beef & rice casserole

Introduction

This is from one of my mother's stashes from when microwaves were just becoming popular and it's become a staple for our family.

I typically use a 2qt round glass casserole dish so I can store it easily when there's leftovers.

I typically use a 2qt round glass casserole dish so I can store it easily when there's leftovers.

Number of Servings: 6

Ingredients

    1-1 1/2 lbs ground beef (or turkey)
    1 can cream of muschroom or cream of chicken soup
    3/4 can milk
    1 can mushrooms
    1 cup uncooked minute rice
    Shredded cheese (As much as you want. We're a cheesy family so I end up using about 2 cups of colby jack, but I've used cheddar and other cheeses and they all taste great)

Directions

Brown hamburger & drain off grease (this can be done in a skillet or in the microwave)
Add soup, milk, mushrooms, rice and cheese to meat and mix.
Cook in microwave for 5 minutes, or until cheese is melted.

Makes about 6 servings
