Sandra's Taco Salad

Ingredients

    100 grams - Ground Beef (extra lean)
    2 tsp. - Taco Seasoning

    1 cup - Brown Rice
    1/2 cup - Canned Tomatoes with Green Chilies
    2 tsp. - Taco Seasoning

    1/4 cup - Black Beans
    1/4 cup - Tomatoes (chopped)
    1.5 TBSP - Raw Onion (chopped)
    1 cup - Lettuce (shredded)
    2 TBSP - Salsa

Directions

* Beef
* Add ground beef to a hot skillet.
(add small amount of water if beef sticks to pan - don't
use oil - it adds to the calories!)
* Drain off all the fat in the pan and rinse pan. Rinse beef
as well to reduce fat even further)
* Put beef back into skillet and add the taco seasoning -
don't add water with the seasoning, it dilutes flavor.

* Make Mexican Rice
* make rice as directed
* add tomatoes with green chilies and the onions and
seasoning approx. 1/2 way before rice is finished
* simmer on low until ready to serve

* Salad
* combine lettuce, onion, tomatoes, black beans and
salsa in a medium sized bowl.
* add meat and rice mixtures and toss all ingredients
together. Serve immed.

Makes enough for 1 serving
