Introduction

Not your mother's pot roast. This is a rich flavored roast that is slow cooked in a crock pot. It is served over horseradish flavored mashed potatoes for a little kick. Not your mother's pot roast. Number of Servings: 8

Ingredients

    2 to 3 lbs pot roast
    1 tsp olive oil
    1 cup chopped onions
    1 cup chopped carrots
    1/2 cup chopped celery
    1 clove minced garlic
    1/2 tsp ground thyme
    1/3 cup tomatoe paste
    1 cup merlot wine
    1/2 tsp ground black pepper
    salt to taste

    Mashed potatoes
    2-3 tbs of Horseradish sauce

Directions

Pat dry the pot roast and rub black pepper on both sides. In a large skillet, brown both sides in olive oil. In a crock pot place chopped onions, carrots and celery on the bottom and lay roast on top of the vegtables. In a small bowl whisk together garlic, thyme, tomato paste, wine and salt. Pour over meat and cook on low for 6-8 hrs or on high for 4-6 hrs. Serve over mashed potatoes with horseradish sauce blended in.
Makes 6-8 servings ( 4 oz piece of meat)
