Pesto Pizza Salad

Introduction

I saw this online and tweaked it to meet my needs. I saw this online and tweaked it to meet my needs.

Ingredients

    1 TBSP pesto sauce
    1 low cal/high fiber tortilla (I use LaBenderita Xtreme Fiber Tortillas
    1 cups arugula
    1/4 cup chopped tomatoes
    1/4 cup white beans
    1 tsp olive oil
    1 tbsp lemon juice
    salt & fresh cracked black pepper


Directions

Spread 1 Tablespoon pesto on low cal/high fiber tortilla; broil until golden. Toss 1 1/2 cups arugula, 1/4 cup chopped tomato, 1/4 cup canned white beans (rinsed and drained) and 1 teaspoon olive oil with fresh lemon juice, salt and pepper to taste. Serve on tortilla.
