Ingredients

1 cup vegetable broth
1/2 cup chopped onion
2 garlic cloves, minced
2 cups of cooked brown rice (or 2/3 cup raw brown rice, cooked )
1 cup fresh spinach leaves, torn into large pieces
1 15 oz. can black beans, rinsed and drained
Salt and Pepper to taste
Directions
Have ready 1 cup of vegetable broth. (You can make it from instant broth flavoring or a bouillon cube).
Use broth as needed to saute the onion for a few minutes until cooked to your liking, then add the garlic and saute briefly. Add the cooked brown rice, spinach, and black beans. Saute until hot. Season to taste with salt and pepper.
