Introduction

Number of Servings: 4

Ingredients

    2 c. cucumber, peeled, seeded and chopped
    zest of one lime
    juice of one lime, approx. 1/2 c.
    olive oil, approx 1/4 c.
    dry italian seasoning, generous tablespoon


Directions

Peel, seed and chop cucumber, place in bowl. Zest one whole lime over cucumber, then cut lime in half and juice into measuring cup. Once measured, add half that measurement in olive oil and whisk to emulisify. Sprinkle 1 generous tablespoon of dry italian seasoning (I use the Italian seasoning from Pampered Chef) over cucumber and zest. Pour juice mixture over contents of bowl, mix well and cover. Best if refrigerated over night.

My serving size on here is 1/2 cup.

Serve with tortilla chips.
