Introduction

Number of Servings: 10

Ingredients

    1.5 cups dried lentils, rinsed
    2 yellow onions
    2 Tbsp olive or canola oil
    3 cups brown rice (cooked)
    1 (6-ounce) can of tomato paste
    1/2 cup ketchup
    1 tsp marjoram
    1 tsp sage
    1 tsp garlic powder
    1/2 cup cherry tomatoes, quartered
    3/4 cup tomato sauce (or pasta sauce)
    Additional ketchup or salt to taste

Directions

Rinse the lentil and cook them in 3-4 cups water until soft (about 30 minutes). Drain excess liquid. Mash lentils slightly.

Meanwhile, peel and chop both onions, cooking them on a skillet with the oil until translucent or golden.

In a large pot or bowl, combine mashed lentils with onions, rice, tomato paste, spices, quartered tomatoes, and pasta sauce until mixed well.

Press mixtured into a well-oiled loaf or baking dish. Spread 1/2 cup ketchup across the top. Bake at 350-degrees for 1 hour.

Add additional ketchup to taste. Will keep (covered) in the refrigerator for 7-10 days.

    I also used 3 cloves of garlic that I cooked w/ the onions. 1/2 cup of finely minced fresh flat leaf parsley that I mixed w/the lentilsand 1 cup of chopped canned mushrooms. YUMMY. - 5/30/09

    Yummy! I really enjoyed this. In order to cut down on prep time, I used pre-cooked lentils and pre-cooked brown rice - both from Trader Joe's - so this came together very quickly for me. Delicious! - 4/15/07

    I would make this again but i would use different spices. I also added oat bran to make it stick together in the loaf. It worked out perfect and was perfect to cut up into slices of loaf. - 7/12/08

    I enjoyed this more than I expected to. My husband is not a big fan of the texture, but he agreed that the flavor was excellent and he's going to try and get used to a little different texture. I'm going to stuff red pepper with the leftovers this weekend -- I think that will work well! - 11/30/07

    I use A LOT more herbs to this. Worchestire sauce and rosemary are big helps. If you have trouble mashing the lentils, mash them when there is still some water in the pan. It really works well for the adults and kids in my family. - 10/10/08

    I read through all comments & made adjustments to the recipe. Had this been called a lentil-brown rice casserole (as someone else mentioned), I would have been better prepared for its taste. Its actually not bad after my adjustments, but it does not at all resemble a meatloaf. - 5/26/08

    I Made this receipe last night.It took alot of time to prepare. Add extra spice amount for more flavor. I started mashing but didn't work well, So i mixed in a food processer, it worked out well. I also cooked it 30 minutes longer so that it would be more like a Loaf. It was really good! - 9/26/07

    I make something similar with other beans as well. I've used navy beans, black beans but my favorite are kidney beans. I like to throw in lots of other spices and veggies too (corn, peas, cooked carrots, etc). - 5/14/08

    I love rice & lentils together (see my recipe M'jedra) & had some left over after making pilaf, so I made this. It was delicious, but I added fresh chopped garlic instead of powder, diced celery in place of the cherry tomatoes & sm amt bread crumbs to make the mixture stick together a little better - 12/12/08

    Absolutely delicious! I made a few modifications: added diced portobello mushrooms, fresh rosemary, fresh garlic, serrano peppers, 1/2 cup of no-salt breadcrumbs, one egg and omited most of the onion and oil, as well as the tomato paste/sauce and most of the ketchup. I tried to keep the sodium down! - 8/31/09

    I won't be making this again. Even though I added more spices than the recipe called for it was bland, & even though I added an egg it was still mush, not a loaf. Also 2 hrs is way too long to get a meal on the table. - 4/23/10

    I wonder if I can use tofu instead of lentils.

    This recipe was good for its nutritional value. The flavor was a little shallow and I would definitely recommended increasing the spices. In regards to texture, it is definitely more a lentil rice casserole than a meatless meatloaf. I made it for vegan friends and would not make it again for my fam. - 2/27/08

    I have made this 'meatloaf' or lentil-rice casserole several times! My son and I love it! I actually use a large casserole dish rather than a loaf pan and it turns out great!     Thanks Coach Nicole, We really liked this, but we don't use ketchup. I like the idea of adding mushrooms and maybe mixing up the lentils. We love lentils, so I know we will make often. I spiced mine up with some Tabasco.

    In its current state, this recipe is the epitome of bland, boring veg cuisine, but it has potential. I omitted the ketchup due to its high sugar and salt content, and in lieu of powder I used three small cloves of garlic. I also added celery; I served it with shiitakes and a red wine reduction. - 8/31/09

    This is Nom-Nommy! I added more spices,'cause I can.
    For people who are not vegetarian: This is not a meat loaf, will not taste like a meat loaf, it looks somewhat like a meat loaf, will provide protein like a meat loaf does. That is where the similarity ends. It is a yummy lentil/rice loaf. Nom it - 2/9/13

    This was delicious! I messed up, added too much rice (I didn't measure, and ended up with around 4 cups), and I didn't add enough salt before cooking. But I cooked the lentils and rice the night before to speed up the cooking process, and used TJ's twenty spices salute. I will make this again! - 3/5/12

    I thought this was good when I made it, but the next day it tasted amazing. The night I made it I served it with boiled potatoes and beets on the side. For lunch the next day I stuffed it in a half a pita pocket with some romaine. Delicious! Truly a keeper. Thanks Coach Nicole! - 1/11/12

    I like this! I added some extra heat to it by using a dash of dried habenaro peppers. I also have high BP, so I had to use all reduced sodium canned/bottled tomato products. Added some crushed oat flake cereal to help hold it together. - 6/12/11

    Keep in mind that you can reduce the sodium level even more by using no salt added tomato paste or sauce and reduced sodium ketchup. Unless you are on a very restricted sodium diet, this is not a bad amount for a main course. - 4/10/10

  • This is my second stab at this Lentil Loaf and I really like it. The first time I tried it the lentils were a bit overcooked, and although I liked it I found it a bit mushy. On my second try I got the lentils just right, the texture of the dish was much better. Good for "Meatless Mondays" - 4/23/14

  • Used millet instead of brown rice -- worked fabulous. Added 2 tablespoon of flax meal -- again, fabulous. Used real garlic and roma tomatoes. My only issue with this recipe is that I had to use a large casserole dish to bake it in. If I just wanted a loaf, I would half the recipe! But it froze well. - 11/4/13

  • I would suggest that the ingredients be listed in order of use. I mistakenly put the ketchup into the loaf instead of on it. I've just tasted the loaf (I added fresh mushrooms sautéed with the onion) and loved it. However, it makes way too much for one person. Does it freeze well? - 10/1/13

    This is good. Can also make into 'burgers', tho best eaten in a ww wrap. I added seamed, rough chopped eggplant for 1/2 of the rice and some corn. Very good. - 9/12/13

    I am making this tonight. I am cutting out the pre-made pasta sauce and ketchup-just too much sugar and sodium. I will be using crushed tomatoes and a little extra tomato paste, some fresh parsley, dry basil, dry oregano, garlic powder. I'm going to tweak it a bit but otherwise, looks super! - 1/8/13

  • I made this last night with my mom. I added 3 cloves of garlic, diced fresh mushrooms and carrots. It was delicious and filling!
    The carrots added a sweetness to it also. Next time I am going to add some curry powder.... - 9/24/12
