Gingerbread Waffles

Introduction

Number of Servings: 6

Ingredients

    2 c. flour
    1 Tbsp baking powder
    1/4 tsp salt
    1/2 tsp ground ginger
    1/2 tsp ground cinnamon
    1/4 tsp ground cloves
    2 large eggs
    1 3/4 c. milk
    1/2 applesauce
    1 tsp vanilla extract
    2 Tbsp molasses

Directions

In a large bowl, combine flour, baking powder, salt and ground ginger, cinnamon and cloves. In a separate bowl, mix together milk, eggs, applesauce, vanilla and molasses. Make a well or a crater in the flour mixture and pour in the wet ingredients. Mix until just combined -- do not overmix. Batter will be slightly lumpy. Cook in a waffle iron according to manufacturer's instructions. Makes 12-16 four-inch waffles or 6 seven-inch waffles.

*Note: if using applesauce sweetened with cinnamon, reduce the amount of ground cinnamon to 1/4 tsp. I occasionally add 1/4 nutmeg to the flour mix for a little extra spice.
