Tofu Salsa Stew

Introduction

Yummy Vegan Stew for cool Autumn days. Yummy Vegan Stew for cool Autumn days.
Number of Servings: 1

Ingredients

    1 onion cut chunky
    2 medium carrots sliced
    1/2 Bell Pepper cut into chunks
    16 oz firm Tofu cut into cubes
    1 jar Salsa of choice
    1 can black beans
    1 can sweet corn
    1 tbsp Oive Oil

Directions

In large skillet, heat olive oil
Add Onion and cook till tender.
Add carrots, green pepper, and tofu. Cook toll carrots are how you like them. I like mine a little crunchy.
Add black beans, corn, and salsa and heat until desired temperature.
This makes a wonderful. veggie filled, colorful stew for a chilly Autumn night.

For some extra goodness, serve with gluten free, vegan, home made cornbread.
