Introduction

Ingredients

    3 split cornish game hens
    3 Tbsp butter, unsalted
    3 tsp fresh lemon juice
    1/2 tsp rosemary
    6 garlic cloves, minced
    Salt and pepper
    4 small potatoes
    1 large sweet potato
    2 medium carrots
    1 medium onion
    1 tbsp olive oil

Directions

1. Rub hens with butter.
2 Combine other ingredients and use to baste hens.
3. Toss potatoes and veggies in olive oil and lay the hens on top.
4. Bake at 350 degrees for 1 hour, basting with lemon mixture every 10 minutes.

  • I cooked this for Easter dinner. Changed it a little. I did not use butter on the hens. I mixed the olive oil, garlic, lemon juice, and thyme and brushed that on the hens and baked. I loved all the vegetables cooked underneath them. I added carrots to that.This had wonderful flavor. High recomm - 4/4/13
