Zucchini Apple Pie

I got this recipe from my aunt who suggested using it for all my zucchini's. I did cut down the sugar from the original recipe and the low sugar version is here. Ingredients

12 cups large peeled & pulp removed zucchini, slice like apples
1 cup lemon juice
1 cup sugar
1/2 tsp. nutmeg
1 tsp cinnamon.
Crust Mix
4 cups flour
1 1/3 cups sugar
1/2 tsp salt
1 1/2 cups margarine
Add 1 tsp. cinnamon
Directions
12 cups large peeled & pulp removed zucchini, slice like apples and cook in 1 cup lemon juice until tender. (About 15 minutes).
Add 1 1/2 cup sugar
1/2 tsp. nutmeg
1 tsp cinnamon.
Simmer a few minutes longer.
Remove from heat.
Crust Mix
4 cups flour
1 1/3 cups sugar
1/2 tsp salt
1 1/2 cups margarine
Combine and crumble like pie crust.
Measure 3/4 Cup for topping.
Divide remaining in half and use 1/2 in 2-10 in pie plates. Press well into each pie plate. Bake 15 minutes.
Add filling while still hot. Add 1 tsp. cinnamon to remaining crustes,
Mix and sprinkle over top of filling. Bake 30 min. at 350 degrees.
Serve with ice cream if desired. tastes like apple pie!
