Banana Nut Bread

Introduction

Number of Servings: 9

Ingredients

    1/2 cup all-purpose flour (can use 50-50 white-WW)
    1/4 cup splenda Brown sugar blend
    2 mashed ripe bananas
    1/4 cup vegetable butter-like spread
    1 egg
    3 tablespoons soy milk
    1 1/4 teaspoons baking powder
    1/4 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/4 cup walnuts

Directions

In a medium bowl mix flour, baking powder, baking soda, salt, and cinnamon and set aside.

In a separate bowl cream butter spread and sugar, add egg and mix until smooth. Stir in milk and mashed banana and mix well.

Fold in flour mixture into the liquid ingredients until combined. Add walnuts and stir.

Fill greased 8x8 pan two-thirds of the way full.

Bake in a preheated 350 degree F (175 degrees C) oven for 20 minutes.

Makes 9 servings.
