Spinach Egg Bake

Introduction

Need veggies? Try this for breakfast, brunch, or dinner!
I lightened this up from another recipe, and reduced the sodium, just by changing the cheese. Also made the serving size smaller, as 8 eggs plus everything else should make more than the original 6 servings, at least in my house!

Ingredients



    1 can spinach
    1/2 cup chopped nions
    4 cloves garlic, minced
    1 Tbsp butter
    8 large eggs
    1 loose cup crumbled blue cheese
    1 cup shredded Swiss cheese
    1/2 cup tomatoes, chopped
    1/4 cup chopped walnuts
    1 sliced tomato, optional, for garnish

Directions

Lightly saute onions and garlic in butter. Beat together eggs and cheeses, reserving some blue cheese for garnish. Add onions, garlic, tomatoes, spinach and walnuts, mix thoroughly. Pour into a sprayed or greased baking dish and bake at 400 degrees for 30 to 35 minutes.

Makes 9 2-inch by2-inch servings. Garnish with remaining cheese and tomato, if desired.
