Mixed fried veggies

Number of Servings: 4

Ingredients

    Mushrooms, fresh, 1.5 cup, pieces or slices (remove)
    *Bell Pepper, Orange, 0.5 serving (remove)
    Peppers, sweet, red, raw, sliced, 0.5 cup (remove)
    Green Peppers (bell peppers), 0.5 cup, strips (remove)
    Yellow Peppers (bell peppers), 0.5 pepper, large (3-3/4" long, 3" dia) (remove)
    Scallions, raw, 1 medium (4-1/8" long) (remove)
    *Extra Light Olive Oil, 2 tbsp (remove)

Directions

Heat olive oil in pan.
Add all viggies and cook on Med to high for about 5-10 min stiring often.
Turn down and cover for 5-10 min or till viggies are done.
Serve over rice or put on side of what ever meat or fish you want.
