1 cup Quaker rolled oats
.50 cup lowfat (1%) cottage cheese
.25 cup white or whole wheat flour
.25 cup tap water
3 large eggs
1 teaspoon vanilla or lemon extract
.50 cup unsweetened applesauce
1 cup frozen (unsweetened) blueberries
Spray heavy frying pan with Pam and heat until a drop of water sizzles. Pour pancake batter into 4 inch circles. Turn over when bubbles form and pop on edges & inside of pancakes. Cook until batter is no longer runny - press down with spatula or slice pancake with an edge of spatula to check.
Makes approximately 7-8 four inch pancakes.
