Hearty Hiking Sandwich (PB w/ Ricotta Cheese & Cinammon)

Introduction

I split the mix evenly on 9 tortilla shells, add the raisins, wrap them up in Saran Wrap and freeze. I then just take one out with an apple for lunch! Ingredients

    2 cups part-skim ricotta cheese (1 container of 475g)
    1/2 cup smooth peanut butter, light
    5 tsp vanilla
    1 tsp cinammon
    1 tbsp raisins
    9 whole wheat tortilla shells

Directions

Combine ricotta cheese, peanut butter, vanilla and cinammon in a blender and process until smooth. Spread evenly on bottom of 9 tortilla shells (about 3 tbsp), top with 1 tbsp of raisins on each. Wrap them up individually in a Saran Wrap and freeze.
Makes 9 individual wraps.
