Lolie's summer Ragu

Introduction

Good as a side dish or served over eggs or pasta. Substitute vegetables as desired. Good as a side dish or served over eggs or pasta. Substitute vegetables as desired.

Ingredients

    Garlic, 1 clove crushed
    Onions, raw, 1 cup, chopped
    Mushrooms, fresh, 4 cup, chopped
    Peppers, sweet, red, fresh, 2 medium chopped
    Red Ripe Tomatoes, 3 Italian tomato chopped
    Oregano, ground, 1 tbsp
    Basil, 2 tbsp
    Salt, 1 tsp

Directions

Coat a very largeskillet with cooking spray; set over medium heat. Add onion and garlic; cook, stirring often, until softened, about 4 minutes. Add mushrooms and salt. Cook, stirring often, until mushrooms give off their liquid and it evaporates to a thick glaze, about 8 minutes.
Add peppers and cook until slightly softened, about 4 minutes. Add tomatoes and herbs, bring to a boil, reduce heat and simmer until sauce is slightly thickened.
