Atkins Chocolate Truffles

If you need an intense chocolate fix, this will do the trick. Great for Low carb or diabetic diets. Easy to make. So rich you can only eat one or two. Ingredients

    1 cup 2% milk
    7 ounces unsweetened chocolate
    3/4 cups granular sugar substitute (I mixed splenda and Sweet-n-Low)
    1 tablespoons unslated butter
    3/4 cups chopped pecans

Cook Time: 5 min
Chill Time: 2 hours
Yield: 35

In a large saucepan heat milk being careful not to scald. Add chocolate and stir until melted. Remove from heat; add sugar substitute and butter. Mix until smooth. Allow to slightly cool. Use a small melon ball scoop to form chocolate balls (or use 2 spoons). Roll in chopped pecans or cocoa powder. Refrigerate until cold and stiff, about 2 hours.

Place truffles in foil candy holders if desired.
