GAPS veggie Meatloaf

Introduction

extra lean meatloaf with veggies instead of oats. extra lean meatloaf with veggies instead of oats.
Number of Servings: 8

Ingredients

    28 oz. grass-fed ground beef
    1 small can of tomato paste
    1-2 small summer squashes or zucchini, shredded
    1 onion, diced
    salt and pepper to taste
    4 pastured eggs


Directions

Mix the above ingredients together, form loaf in the center of a 9x13 pan and fill in around the edges with veggies and potatoes for an easy one dish oven baked family dinner. 400 degree oven. Serves at least six, with a couple of portions left over....or growing kids who take seconds. 8 servings total.
