Wolf's Quick n' Healthy Chili

Introduction

My hubby came up with this recipe to give me the chili I love in a totally healthy package with super high protein. My hubby came up with this recipe to give me the chili I love in a totally healthy package with super high protein.
Number of Servings: 8

Ingredients

    1 package (the equivilent of 1lb of ground beef) Boca Meatless Ground Burger
    2 cans (14.5oz) Hunt's Diced Fire Roasted Tomatoes (undrained)
    1 can Bush's Best Seasoned Black Beans (undrained)
    1 can Bush's Best Seasoned Dark Red Kidney Beans (undrained)
    1 medium Onion (diced)
    4 tbsp Chili Powder (adjust for taste, but at least 3 tbsp)
    3 tbsp Paprika (sweet)
    2 tsp Onion Powder
    3 cloves Garlic (minced)

Directions

Over medium high heat, saute onion in dry pan with 1 short spray of non-stick spray (not enough to count in nutrition info) for approx. 5 minutes. Then add minced garlic and boca. Stir to combine. Add canned items and juices, stir throughly then add chili and onion powders and paprika. Stir to combine, then cover and reduce heat to LOW. Simmer over low heat, covered, for 20 minutes, stirring occasionally.

Serve hot in a bowl, add a sprinkle of shredded cheese and a small dollop of sour cream if desired. (Not included in nutritional info.)

Makes about 8, 1.5 cup servings.
