Introduction

Simply one of the healthiest and best cookie recipes I've ever found!!! Substitute sugars with Splenda, 2 eggs for 3 egg whites, and 1/2 c. applesauce for the butter and it's just as tasty with none of the "bad stuff!" Ingredients

    Butter, unsalted - .5 Cup
    Brown Sugar - 1 Cup packed firmly
    White Sugar - .5 Cup
    2 Eggs
    Vanilla Extract - 1 tsp
    All Purpose Flour - 1.5 Cups (or 3/4 c. whole wheat flour, 3/4 c. white flour)
    Baking Soda - 1 tsp
    Cinnamon - 1 tsp
    Old Fashioned Oats - 3 cups
    Raisins - 1 cup

Directions

Preheat oven to 350.

Cream butter and sugars. Add eggs and vanilla extract and mix. Combine flours, baking soda, and cinnamon and add gently beating completely in. Gradually add oats 1 c. at a time. Gently mix in Raisins.

Place on an ungreased cookie sheet by rounded teaspoonfuls and bake 8-10 minutes.
