1T olive oil
2 slices Canadian Bacon
4 Chicken thighs w/o skin 12 oz.
1C chopped onions
2 cloves crushed garlic (1t from jar)
1/2C beef stock
C red wine
1 Bay Leaf or tsp crushed
1t black pepper
1T parsley dried or 1C fresh
2 large carrots chopped
2 medium celery stalks chopped
1/2 lb mushrooms chopped
add garlic and pepper cook another 5min.
add the stock, wine, thyme, parsley, and vegetables.
lower heat and simmer for 10 min.
Discard bay leaf and add mushrooms.
turn heat to high and boil uncovered for 10 min. or until liquid is reduce by half.
serve over 1/4C cooked brown rice in soup bowl
makes four servings with 300 calories in each serving.
