1 lb ground beef
3 1/2 cups Francesco Rinaldi tomato & onion sauce
1 box Dreamfields Lasagna noodles (13.25oz)
4 cups part skim Wegmans Ricotta cheese
2 cups (8oz) Wegmans 2 % shredded mozzarella cheese
1/4 cup grated parmesan cheese
4 large eggs
1 Tbsp chopped fresh parsley
1 tsp salt
1/4 tsp black pepper
Boil a large pot of water and cook the noodles. Drain and lay flat on waxed paper to cool.
In a large skillet brown the ground beef, then drain the fat and return the meat to the pan along with the spaghetti sauce. Simmer the sauce /meat combo for 10 minutes.
In a large bowl stir to completely combine the ricotta, 1 1/2 cups of the mozzarella (saving the last 1//2 cup for the final step), parmesan, eggs, parsley, salt and pepper.
In a 13 x 9 " pan spread 1/2 cup of sauce, then a layer of cooked noodles (overlapping the edges). Next spread a layer (1/3 ) of the cheese mixture. Then another 1/2 cup sauce, noodle, cheese, sauce, noodle cheese until you have three complete layers, ending with a noodle layer and the remaining sauce and mozzarella on the top.
Cover with foil and bake in a 350' oven for 30 minutes. Remove the foil and continue to bake for 10 -15 minutes more until the cheese on top is bubbly. Remove the lasagna from the oven and let it rest for up to 30 minutes before serving. This yields 12 servings.
