Baked Macaroni and Cheese

Introduction

I love mac-n-cheese like everyone else but I know that the boxed kind is not as healthy and also has little comparison in taste. I love mac-n-cheese like everyone else but I know that the boxed kind is not as healthy and also has little comparison in taste.
Number of Servings: 12

Ingredients

    2-cups elbow noodles, whole wheat, cooked

    1-Tablespoons unsalted margarine (I use smart balance)

    2-Tablespoons all purpose flour

    1-Teaspoon salt

    1-Teaspoon ground mustard

    2-cups Whole Horizon Organic Milk

    1-cup mild cheddar cheese, shredded

    1-cup mozzarella cheese, shredded

    1 egg

    Pepper to taste

Directions

1. Preheat oven to 350 degrees F.


2. Melt margarine in a saucepan over medium heat. Stir in flour, salt, and ground mustard. Mix will be lumpy. If it doesn't mix together well enough, I add a bit of water to avoid adding more butter. This mixture will thicken the sauce.


3. Slowly stir in the milk. Stir constantly until the mixture boils. When the sauce thickens slightly, stir in the cheese. After stirring in all of the cheese and allowing it to melt, the sauce should thicken appropriately.


4. Add the egg and stir thoroughly.


5. Pour the cheese sauce over cooked elbow noodles and stir.


6. Bake for 45 minutes.
