Introduction

Number of Servings: 8

Ingredients

    1 (12oz) package linguine
    1 1/2 lbs bonless,skinless chicken breast cut into chunks
    1/4c olive oil
    1t minced garlic
    1/2 lbs fresh mushrooms sliced
    1 onion chopped
    1 red bell pepper chopped
    1/2t each, dried basil, dried oregano leaves and dried thyme
    salt and pepper to taste
    1 c frozen peas
    1/4c grated light parmesan cheese


Directions

Cook noodles according to package omitting salt or oil. Drain
In large skillet, cook chicken in olive oil and garlic over medium heat until browned and done. Add mushrooms, onion, red pepper, oregano, basil thyme, salt and pepper sauteing until tender. Add peas toss until heated. Add pasta. Add parmesan cheese and serve.
