Summer Squash Sail Boats

Introduction

Just like zucchini boats, but with summer squash. Just like zucchini boats, but with summer squash.
Number of Servings: 1

Ingredients

    1 large summer squash, halved and seeded
    1 lb ground turkey (lean)
    1 tin of tomatoes
    4 tbsp of a sweet relish (preferably zucchini)
    1 cup shredded low-fat cheddar or mozzarella cheese

Directions

Makes 4 servings

1.Brown ground turkey.
2. Drain.
3. Add tomatoes. Let simmer until mixture thickens
4. Slice summer squash in half lengthwise and seed.
5. Fill summer squash with meat mixture.
6. Top with relish.
7. Sprinkle with cheese.
8. Bake in oven at 350F for 30-45 minute or until squash is tender.
