Apple Pie Cupcakes



Introduction

Ingredients

    Cupcakes:
    1/2 cup + 1 tbsp whole wheat flour
    1/2 cup white flour
    1/4 cup Splenda brown sugar blend
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 tsp cinnamon
    1/4 tsp ground cloves
    1/4 tsp ground nutmeg
    1 pinch salt
    1/2 cup nonfat milk
    1 tbsp vegetable oil
    3 tbsp unsweetened applesauce
    1 tbsp spiced rum
    1 tsp vanilla extract
    3/4 cup apple, finely diced (about 1 apple)

    Icing:
    1/8 cup Splenda brown sugar blend
    1 tbsp Promise Light spread
    1/2 cup powdered sugar
    1/4 cup nonfat milk

Directions

1. Preheat oven to 350 degrees. Line muffin pan with cupcake liners.
2. In a large bowl, combine flours, brown sugar, baking soda, baking powder, cinnamon, cloves, nutmeg and salt. Whisk to combine thoroughly and break up any sugar clumps.
3. Add milk, oil, rum, apple sauce, and vanilla and stir until just incorporated.
4. Fold in apple until just incorporated.
5. Spoon in, filling cupcake liners approximately 2/3-3/4 way full, dividing evenly among liners.
6. Bake in oven for 25 minutes, or until toothpick inserted in center of cupcakes comes out clean.
7. Meanwhile, make caramel glaze - in a small pan, combine brown sugar and Promise Light spread over medium low heat.
8. Bring mixture to boil, remove from heat, stir in powdered sugar and milk and glaze cupcakes before mixture cools.
