Chicken with Pasta Soup

Introduction

Used leftover grilled chicken that had been marinated in Mrs. Dash Garlic Herb marinade. Low sodium, low fat, but creamy good! Used leftover grilled chicken that had been marinated in Mrs. Dash Garlic Herb marinade. Low sodium, low fat, but creamy good!
Number of Servings: 8

Ingredients

    9 oz cooked chicken breast, diced
    3 carrots, peeled and sliced
    3 stalks celery, diced
    1 onion, chopped
    6 c. water
    1 bay leaf
    9 oz Dreamfields rotini, uncooked weight
    2 c. non-fat milk
    1/4 c. cornstarch

Directions

Place chopped chicken, bay leaf, and veggies in 4 qt. dutch oven. Bring to a boil. Simmer about 15 minutes until the veggies are soft. Add pasta, and cook 10 minutes. Mix milk and cornstarch together, and slowly add to simmering soup, stirring constantly, until soup thickens. Add pepper to taste. Enjoy! Makes 8 servings.

  • Very, very yummy!!! This is a keeper for sure. I used two cans of chicken broth, then remainder finished with the water instead of using 6 cups of water, gave more flavor to the soup, probably increased sodium a little, but that was ok with me. - 10/9/09
