This tortilla soup tastes better than anything you can get at a restaurant. And it's healthy too! Don't let the long list of ingredients fool you. Ingredients

1 pound frozen chicken (shred near end of cooking time)
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
3(14.5 ounce) cans chicken broth
1 teaspoon cumin
1/4 teaspoon black pepper
1 (10 ounce) package frozen corn
1 can black beans, rinsed
Tips
Directions
Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in chicken broth, and season with cumin, salt, and pepper. Stir in corn and black beans. Cover and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours. Garnish with crushed tortilla chips, sour cream, shredded cheese, or avocadoes. (Note: garnishes not included in nutrition information) Makes 8 servings.

I made a couple of small changes. Instead of canned enchilada sauce, I used tomato sauce with taco seasoning. Also threw about half a cup of cornmeal that thickened up the soup a lot and instead of tomatoes, put in small jar of salsa. Topped with cheese, light sour cream and oven toasted tortilla. - 10/14/12

I changed this recipe just a little. I had some homemade v-8 juice I used instead of tomatoes. I didn't have black beans but chili beans worked well. I added 4 cups of frozen green beans and 2 cups of kale. All from my garden of 2012. This is SO easy and So delishes. Very low calories also but filli - 1/14/13

I made this today and it was delicious! I made a few small changes- one less can of chicken broth (2 total), I used mexican recipe stewed tomatoes for extra flavor, and a couple of splashes of chipolte hot sauce. Made the house smell so good all day! Plenty to share and have some left over! - 1/6/13

I made changes to the recipe so I "made-over" the recipe...only to find that the ingredients list was not the same as what was used for the nutritional calculations. Big difference between "3(14.5 ounce) cans chicken broth " and homemade chicken broth. Same thing for canned green chiles vs. fresh. - 1/4/13

I didn't have enchilada sauce,so I mixed homemade salsa, tomato paste, chili powder, the cumin and diced tomatoes (instead of whole). I used 32 oz. of broth (slightly less than the recipe calls for). Topped with shredded taco cheese, fresh cilantro and crushed taco shell. We loved it. Makes a LOT! - 11/28/12

I just made this (as-is) and it is pretty good! I'd probably make it again because it's just SO easy to make, and low-calorie too. The recipe says it makes 8 servings, but when I meausured it out afterwards into a tupperware, I measured 23 cups! So a "serving" is about 3 cups of soup...wow! - 11/17/12

We loved this recipe! Used 7ozs. of green chilies; a quart of stewed tomatoes. Used an enchillada sauce recipe from allrecipes.com. Seasonings were not increased. Forgot the chicken broth didn't see a need for it - would make it stretch further though. Consider adding a pkg of ranch next time. - 7/18/12

This is just so yummy! Followed the recipe except for canned corn, instead of frozen and used canned jalepenos instead of chili peppers. The enchilada sauce I used was the green sauce so spicier. Very tasty, did not need to add taco mix as others have. Husband says that he could eat this every day!! - 3/13/12

Awesome, i did tweek it a little bit fat free low sodium chicken broth 2 cans because that's all that would fit because i doubled the recipe, red fire roasted cut up tomatoes, low-sodium 1 pkg taco seasoning mix. I can't wait to eat some more today now that the seasonings have set in overnight. - 3/11/12

When this recipe says 8 servings it means it! I decided to double it for my family of 6. I have a few growing boys and really wanted some extra soup to put away for lunches for myself. I ended up having to get out my spare crockpot because I ran out of room (first time ever!) in my big one!! - 3/9/12

Just threw this together w/ what I had on hand - used a pkg of ench. sauce (added extra water), sprouted lentils (no blk beans), added salsa (for the peppers), & homemade turkey broth (b/c that's what I had in the freezer). Passed on the onion (due to salsa) and more garlic. Tastes Wonderful! - 2/27/12

This makes a TON of soup! I have a 4 qt crock pot and I couldn't fit all of the chicken stock in it. The flavor was good but I doubled the garlic and had to add more salt. There really isn't any kick and I found Sriracha sauce gave the best heat. Makes great leftover and love the calorie count! - 2/6/12

Best soup EVER! Best soup I've ever had. The flavor is outstanding! I make my own tortilla strips by cutting a flour tortilla into thin strips & frying in a bit of oil until golden (only takes a moment) & is 100x's better than chips & top with sour cream, cilantro & avocado-I prefer no cheese. - 1/22/12

delicious & healthy & you can modify it. For instance add it some chopped green or red peppers or celery if you want a little more veggies. Or sub a jar of prepared picante sauce (or your own) for the enchilada sauce & chiles. Use what you have, you almost can't go wrong ...it will be delish! - 12/28/11
