Tostadas de Pollo

Ingredients

    12 Mission Yellow Corn Tortillas
    1.5 Tbsp Extra Light Olive Oil
    1.5 cup Rosarita Refried Beans, Fat Free
    3 cups Iceberg Lettuce, shredded or chopped
    1 Chicken Breast Boneless Skinless, apx 12 oz cooked and shredded
    1 small Onion, sliced or chopped
    2 Red Ripe Tomatoes, sliced
    1 Avocado, peeled, pitted, and cut into strips
    Salt
    1 cup Lucerne Fat Free Sour Cream
    .75 cup shredded Cheddar Cheese

Directions

Heat oil in a small skillet and fry the tortillas until they are crisp and golden - 45 seconds to 1 minute per side. Place in a colander and set aside. (Can be prepared up to an hour before serving)

Heat the refried beans and spread each tortilla with beans, top with lettuce, chicken, chopped onion, 2 slices of tomato, and a strip of avocado. Sprinkle lightly with salt. Place a tablespoon of sour cream on top and sprinkle with cheese.
