Raisin challah bread pudding

Introduction

this is adapted form cooking light using soy milk for 2% milk and omitting the raisins and bourbon. this is adapted form cooking light using soy milk for 2% milk and omitting the raisins and bourbon.
Number of Servings: 9

Ingredients

    # 1 1/4 cups soy milk
    # 1/4 cup sugar
    # 1 tablespoon vanilla extract
    # 1/2 teaspoon ground cinnamon
    # 1/4 teaspoon ground nutmeg
    # 3 large eggs, lightly beaten
    # 4 1/2 cups raisin challah cubed in bit size pieces or other dense bread
    # Cooking spray

Directions

combine soy milk, eggs, vanilla and spices. add the bread and mix. prepare a 8X8 dish with the cooking spray. ladled the bread mixture in to the dish. let rest in fridge covered with foil between 1/2 hour to 4 hours. sprinkle sugar on top before baking.
pre heat oven to 350
place the 8X8 dish in a 9X13 backing dish fill with hot water about an inch up the side. bake covered for 20 min. uncover for about 10 or until set. knife should come out clean. served warm or at room temp.
makes 9 servings
