Shrimp Salad

Ingredients

    1 (16 oz) box orzo pasta
    1-1/2# cooked, large chopped shrimp
    1/2 cup minced onion
    1/2 cup minced celery
    1 oz lemon juice
    1/2 cup light mayo
    1 tbsp citrus grill seasoning
    black pepper to taste
    5 oz container crumbled feta cheese

Directions

Cook orzo according to package directions; drain

Into a large bowl, add:
chopped shrimp
minced onion and celery
lemon juice
mayo
citrus grill seasoning
pepper
feta cheese

Mix ingredients well. To the bowl add the drained and chilled orzo pasta.

Allow to sit, covered, in the refrigerator for at least 30 minutes.

Recipe yields approximately 13 - 1 cup portions
