Chili Mac Skillet

Number of Servings: 8

Ingredients

    1 lb lean ground beef
    1 small to medium onion, chopped
    1 bell pepper (any color), chopped
    3-4 cloves garlic, pressed
    2 cups pasta (I used Bar. whole wheat medium shells), uncooked
    2 cans - 14.5 diced tomatoes (or 1 -28 ounce can) undrained
    1 cup water
    2 tsp. cumin
    1 Tablespoon chili powder
    salt and pepper
    1 - 2 cups grated cheddar cheese
    I can kidney beans drained

Directions

In large skillet, brown meat (remove excess fat if necessary). Add onion, peppers and garlic, cook until vegetables are tender. Stir in spices and heat a minute until fragrant. Add water and uncooked pasta, tomatoes and kidney beans. Cover and simmer 20 minutes or until pasta is tender. Uncover and cook another 5 minutes, sprinkle grated cheese on top. 1 cup servings
