Granola (Fruity)

Submitted by: SRWOODSY

Introduction

I got this recipe out of the November 2006 issue of Gourmet Magazine. A note said it was adapted from Calle Ocho. Note also states: "Making your own cereal couldn't be easier. This recipe is about personal taste -- adjust the fruit amounts to your liking." I got this recipe out of the November 2006 issue of Gourmet Magazine. A note said it was adapted from Calle Ocho. Ingredients

    3 cups old fashioned oats
    1 c. sweetened flaked coconut
    1/2 c. vegetable oil
    1/2 c. walnuts (1 3/4 oz) chopped
    1/3 c. sliced almonds (1 oz)
1/3 c. green (hulled) pumpkin seeds (1 1/2 oz., not roasted)
    (I just used sunflower seeds)
1/3 c. packed dark brown sugar
    1/4 c. mild honey
    Pinch cinnamon
    Pinch salt
1 c. dried tart cherries (I'd put less in next time.)
    1/2 c. dried blueberries.
    1/2 c. diced (1/4 in.) dried pears (3 halves)
    1/2 c. diced (1/4 in.) dried apricots
1/3 c. raisins (or golden raisins)

(Accompaniment: Sliced bananas; plain yogurt flavored with vanilla extract.)

Directions

Put oven rack in middle position and preheat oven to 325.

In a large bowl, stir together all ingredients from "oats" to "salt" until combined.

Line a large shallow baking pan with parchment paper and spread the mixture evenly on it. Bake for 30 to 35 minutes, stirring occasionally (every ten minutes) until golden brown. Transfer to a cooling rack to cool, stirring occasionally, about 45 minutes. Stir in dried fruit.

NOTE: Granola keeps, frozen (the fruit's moisture softens granola if not kept frozen) in an airtight container, 1 month.
