Hokkaido Pumpkin Cream Soup

Introduction

Hokkaido pumpkin is also known as ambercup pumpkin. It doesn't need to be peeled. I used a soy-based, non-dairy creamer. Sour cream could also be used. Number of Servings: 5

Ingredients

    1 hokkaido pumpkin (about 700 grams)
    1 250 g carton of Alpro cuisine (soy cream)
    2 cups vegetable broth
    1/2 tsp cinnamon
    1/2 tsp coriander
    1 tsp salt
    pepper to taste

Directions

Cut up the pumpkin into 2" pieces. Steam till soft. Puree the pumpkin. Add the soy cream, 2 cups of vegetable broth and the spices. Stir while reheating. Serve with a parsley garnish if desired.

Makes approx. 5 one-cup servings.
