Zucchini "noodles"

Introduction

A delicious way to use extra zucchini from your garden! A delicious way to use extra zucchini from your garden!
Number of Servings: 2

Ingredients

    3 c shredded zucchini
    2 T grated parm cheese
    1 tsp olive oil
    black pepper

Directions

Peel zucchini, shred or slice on mandolin into small "noodles". Shred from the outside, turning to avoid the seeds. Heat frying pan with oil and stirfry until just tender; 5-8 minutes. sprinkle on parmesan cheese, season, stir and serve. Serving size is 1 cup cooked.

    I think its best when you shred them really small, maybe 1/16th of an inch. But I have also prepared it with a 1/4" shred or sliced thin.
