Ingredients


    Leftover Creamy Company Crock Pot Chicken, 3 servings, including rice
    1/2 cup white wine
    2 cups fresh chopped broccoli
    1 can LaChoy Bean Sprouts, drained
    1 can bamboo shoots. drained
    1/4 cup sunflower seeds
    1/4 cup sliced almonds
    2 tbsp olive oil
    1 Tbsp minced ginger root
    3 small scallions, sliced, for garnish

Directions

Chop leftover chicken into bite-size pieces. Put chicken, sauce, and wine in a pan. Turn heat on low to begin heating through.
In a saute pan, heat olive oil and ginger over medium heat. Add sunflower seeds and sliced almonds, stirring constantly until lightly browned. Add bean sprouts and bamboo shoots. Heat, stirring, about two minutes. Add to chicken mixture. Increase heat to medium/low and add broccoli.
Put leftover rice in saute pan and heat on low, stirring occasionally.

When everything is hot, serve chicken "stew" over rice, garnished with chopped scallions.

Makes 6 generous servings.
