Introduction

Number of Servings: 6

Ingredients

    1 tbsp olive oil
    1 small onion, finely chopped
    2 garlic cloves
    1/4 tsp dried basil
    1/4 tsp dried oregano
    1/8 tsp freshly ground black pepper
    salt
    1 tbsp tomato paste
    1 lb boneless, skinless chicken breast, cut crosswise into 1/2 inch slices
    1 (15-ounce) can lentils, drained and rinsed
    1 (14.5-ounce) can diced tomatoes, with juices
    3/4 cup lower-sodium chicken broth

Directions

In medium saucepan, heat oil over medium heat. Add onion, garlic, basil, oregano, pepper, and pinch salt. Reduce to med-low and cook, stirring occasionally 4 minutes. Add tomato paste, cook 3 minutes longer. Add chicken and cook 1 minute. Add lentils, tomatoes with juice and broth. Bring to gentle simmer. Reduce heat to low, cover, anc cook until chicken is cooked through, 7-10 minuites. Season with salt and pepper to taste.
