Venison Meatloaf

Ingredients

    *Venison, ground, 32 oz (remove)
    Egg, fresh, 2 large (remove)
    Bread crumbs, dry, grated, plain, 1 cup (remove)
    Carrots, cooked, 0.5 cup slices (remove)
    Celery, cooked, .5 cup, diced (remove)
    Onions, raw, .5 cup, chopped (remove)
    Mozzarella Cheese, part skim milk, 6 oz (remove)
    *Extra Virgin Olive Oil, 2 tbsp (remove)
    Garlic, 4 cloves (remove)
    Mushrooms, cooked, .5 cup pieces (remove)

Directions

Saute carrots, celery, onions, & garlic in 2 tbs olive oil for 10 minutes, add mushrooms the last minute. Soak bread crumbs in 1/3 cup mushroom water for 5 minutes. Mix bread crumb mixture, ground venison, vegetables and lightly beaten eggs, then add in 1/2" cubes of mozzarella cheese, form into a loaf in a roast pan and bake at 350 degrees for 70 minutes or until internal temperature is 165 degrees.
