Unstuffed Cabbage (with fire roasted tomatoes)

My version of this yummy dish, made with fire roasted garlic tomatoes for more zesty flavor My version of this yummy dish, made with fire roasted garlic tomatoes for more zesty flavor
Number of Servings: 4

Ingredients

    8oz extra lean ground beef
    1 medium yellow onion, chopped
    1 can Hunts Fire Roasted Diced tomatoes with Garlic
    1/2 package shredded cabbage (cole slaw mix)
    1 cup water
    1 cup instant brown rice, uncooked

Directions

Directions
Brown meat and onion in large skillet on medium-high heat 4 to 6 minutes or until meat is cooked through.

Add tomatoes and cole slaw mix; stir. Reduce heat to simmer; cover tightly. Cook 20 to 25 minutes or until cabbage is tender.

Stir in water and rice; bring to boil. Cover; reduce heat and cook 5 minutes. Remove from heat; stir and cover. Let stand 5 minutes before serving.
