Stuffed Pepper

Introduction

A high protein meal that fills you up!! A high protein meal that fills you up!!
Number of Servings: 1

Ingredients

    One green pepper, preferably roasted beforehand, or parboiled for five minutes
    One small can chopped clams, rinsed well and drained
    One ounce (28 grams) of Fat Free Presidente Feta Cheese Crumbles
    One tiny box of raisins
    One scant tablespoon tahini
    One serving of Ken's Light Raspberry Vinagrette dressing, spray

Directions

Roast the pepper and leave the skin on. Or parboil it for 5 minutes. You don't have to use a green one, any size, any color pepper will do. Just de-stem and take the seeds out.
Rinse and drain the clams of all sand and water - this will cut way down on the sodium. Drain well and transfer to a bowl.
Mix in the cheese, raisins, tahini, and raspberry walnut dressing with the clams.
When the pepper is ready, pack it full of the clam mixture. Set the oven to 350 degrees Fahrenheit.
Take the label off of the can of clams. Set the pepper upright in the can and bake for 20 minutes.
Makes one serving.
