IntroductionA high protein meal that fills you up!! A high protein meal that fills you up!!
One green pepper, preferably roasted beforehand, or parboiled for five minutes
One small can chopped clams, rinsed well and drained
One ounce (28 grams) of Fat Free Presidente Feta Cheese Crumbles
One tiny box of raisins
One scant tablespoon tahini
One serving of Ken's Light Raspberry Vinagrette dressing, spray
Rinse and drain the clams of all sand and water - this will cut way down on the sodium. Drain well and transfer to a bowl.
Mix in the cheese, raisins, tahini, and raspberry walnut dressing with the clams.
When the pepper is ready, pack it full of the clam mixture. Set the oven to 350 degrees Fahrenheit.
Take the label off of the can of clams. Set the pepper upright in the can and bake for 20 minutes.
Makes one serving.
