Egg white crepes with Caramel apple filling

Ingredients

Apple filling:
Butter, salted, 1 tbsp -melted
Brown Sugar, 0.3 cup, packed
Nutmeg 1/8 t
Cinnamon 1/8 t
Vanilla bean - 1/2 pod, split and scraped
Apples, fresh, 2 medium
Crepes:
Whole Wheat Flour, .5 cup
Milk, 2%, .5 cup
egg white, fresh, 2 large or 1/2 cup
Butter, salted, 1 tbsp - melted
Directions
Put 1T melted butter, milk, egg whites and flour in a blender and whizz till combined and a little frothy. Set aside in the fridge for 10 minutes.
Melt remaining 1T butter in a small saucepan over medium heat. Add brown sugar.
Scrape the seeds out of 1/2 of a vanilla bean and add to mixture. Add cinnamon and nutmeg and heat on medium till melted.
Slice or dice the apples - leaving skin on - and add them to the pan. Cover and heat on low, stirring occasionally but gently, till apples are soft.
Make crepes to your desired size - makes about 12 small (6") crepes or 6 large ones, and fill. Pour some of the syrup on the top. You can garnish with whipped cream or a sprinkle of cinnamon.
