Cauliflower "Mock Potato" Salad

Number of Servings: 6

Ingredients

    1 lb. raw cauiflower, cut into 1 inch pieces
    2 hard boiled eggs, diced
    3 slices crisp cooked bacon, crumbled (Oscar Mayer Low Fat Center Cut)
    1 T. chopped green onions
    1/2 celery stalk, chopped
    1 T. chopped parsley
    1/4 tsp. black pepper
    2/3 tsp. salt
    2/3 cup Duke's SF Mayonnaise

Directions

Put about 1 inch of water into a covered medium saucepan. Place cauliflower pieces into pan, cover, and cook over medium heat about 6 to 8 minutes until cauliflower is slightly firm. Drain and immediately run cold water over cauliflower to stop it from cooking any further. Add all ingredients together, mix well and chill. Makes 6 servings.
