Introduction

Number of Servings: 2

Ingredients

    1 tsp. olive oil
    1/4 onion, chopped
    1 clove garlic, chopped
    2 mushrooms, sliced
    1 zucchini - sliced
    3 tomatoes - chopped
    1/2 green pepper - chopped
    1 cup tomatoe juice
    dash dried hot chili peppers (optional)
    1/4 tsp. Italian seasoning
    1/2 tsp cornstarch
    pepper and salt to taste

Directions

Saute garlic and onions in nonstick pan. Add remaining vegetables and cook until soft. Add chili pepper flakes and Italian seasonging and cook 2 minutes more. Add tomato juice and cornstarch. Simmer for 20 minutes.
