fat free ricotta 8 oz (half of the small container)
1/4c parm. cheese
1 package grated mozarella
1/2 pack italian sauage (mild)
1 large eggplant, peeled and roasted
1 jar favorite tomato sauce.
oven ready lasagne sheets
brown and break up the sausage. (I've added a chopped onion here). once browned, add in the eggplant, mushing it all together.
assemble the lasagne:
put 1/2 c of the sauce on the bottom of an 8x8 pan.
layer on 2 lasagne sheets
spread 1/2 of the ricotta mix.
spread 1/2 of the meat mix on this.
add 1/2 to 3/4c of sauce.
spread a handfull of shredded mozzarella.
noodle, and repeat.
top with sauce and shredded cheese.
bake at 375, covered for 1 hour to 1.5 hours.
(I usually put a cookie sheet under the pan to catch drips)
