1/4 cup red lentils
1/2 cup water
1/2 cup reduced-sodium chicken or vegetable broth
1 tsp olive oil
2 garlic cloves, chopped
2 c chopped kale
2 lemon wedges, juice for flavor
salt and pepper as desired
Clean and rinse the kale, cutting out the stems, and chop approx. 2 cups worth. Chop the garlic. When the lentils are done, put them aside. At that point, add the garlic and olive oil to a sautee pan on Medium, add the kale and sautee until wilted. Add the cooked lentils, and fold into the kale slightly. Remove from heat, add the juice of a lemon wedge for each serving, and salt and pepper to taste, to your liking. Makes 2 hearty servings... Enjoy!

Taste: really good, I didn't think it needed any adjustments to the recipe.
Serving size: not sure why this is deemed 'hearty'. I followed the recipe to the letter, and I ended up with less than 1 cup total, so two very small servings. I had planned it as my lunch, and it was definitely not a meal - 2/18/13
I used fresh spinach instead of kale, it was great. - 2/4/10

I added some Hot Curry, Turmeric, Granulated Garlic, Onion Powder and Sailor Lemon Salt to jazz it up a bit. Yum! - 3/23/13

i plan on making this sometime next week. sounds amazing. i absolutley love the way kale turns out in soup. i make a soup with kale, garlic, tomatos, potatos, onion, chic peas, chicken broth, and chorizo. my family eats it up! - 2/23/10
