4 cups sharp cheddar cheese grated
2 cups monterey jack cheese grated
1 small jar pimentos, chopped
2 tbsp onion grated
1 8oz package cream cheese
1 cup mayonaise
1 lb elbow macaroni
While macaroni is boiling, mix cream cheese, mayonaise, 2 cups cheddar, monterey jack, pimento and onion together to make pimento cheese mixture.
Add macaroni to cheese mixture and mix.
Pour into 13x9 baking dish, add reserved 2 cups cheddar cheese to top. Bake at 350 for 20-25min.
