Roasted Potatoe Soup

Ingredients

    3 large leeks, chopped (only white and light green parts)
    2 tbsp butter
    5 small/medium redskin potatoes diced, small pieces
    6 cups of water
    1 cup low fat milk
    salt
    pepper
    Knorr veggie Bouillon (3 cubes)

Directions

Melt butter in pot. Saute leeks. Add potatoes. Saute 4 minutes, stirring frequently (medium low heat). Add water, bouillon, and boil. Reduce to simmer - 20 minutes. Add milk, and then salt and pepper to taste.
