2 cups fresh green beans, cut into 1 inch lenghts
1 can (15 oz) chick peas or lima beans
1 can (15 oz) kidney beans
2 Tbs minced onion (try red, if desired)
3 medium cloves garlic, pressed
1 large ripe fresh tomato, seeds and excess pulp removed, diced
2 Tbs chopped fresh basil
1 Tbs chopped fresh parsley (Italian or regular)
3 Tbs lemon juice (juice of one large lemon)
2 tsp olive oil
salt and pepper to taste
Drain and rinse canned beans. Let them sit in a colandar for a couple of minutes to drain excess liquid.
Mix all ingredients together. If you have the time, let marinate for at least15 minutes. This can keep in the refrigerator for at least 3 days.
