Insta-Bake Blueberry pancakes

Ingredients

    1 cup Hodgson Mill Insa-Bake Mix
    .25 cup Egg Beaters
    .66 cup Moo-topia Lactose Free 2% Milk (less sugar, protien fortified milk)
    1 tsp. Cinammon
    1 tsp. baking soda
    2 tsp. baking powder
    1 tsp. lemon juice
    1 pint fresh blueberries, rinsed

Directions

Mix dry ingredients except berries. Add milk and Egg Beaters and mix just until thoroughly moistened. Add lemon juice and blueberries and mix to combine.
Heat non-stick skillet over medium heat. Coat pan with Pam spray. Place 1/2 cup batter in pan. Cook until bubbles appear, and bottom is golden brown. Then flip and cook other side until golden brown. Repeat until the batter is gone. Makes 4 pankakes, one per serving. Serve with your favorite syrup, or whipped topping.
